Roast

Smoked Pork Shoulder Butt
We carefully select a beautiful pork shoulder, trim it, and apply our very own CJ's dry rub. It consists of 9 fresh spices that bring out the fabulous flavor and aroma of the pork without saturating it with salt. After it sits over night we begin our two step process of cooking and smoking it on either hickory or pecan for over 7 hours! The tender, juicy lightly smoked meat is an explosion of flavor that you are sure to come back for time and time again.

Lemon Pepper Roast Pork
This was Granny's specialty and it tastes so wonderful that we borrowed the recipe from her. We only use top grade cut of Pork Shoulder Butt. We season it with fresh lemon, pepper and garlic then let the flavor soak in over night. The very next morning it goes into a carefully calibrated convection oven to cook evenly and perfectly. We promise you that you have never tasted this American classic so juicy and tender before.

Spicy Pork Sandwiches
This is a delightful combination of spicy pork with a gentle glaze of brown sugar with a hint of Dijon. Served on a Kaiser Roll, it is so good you will ask for more.

Lemon Pepper Chicken
Tender oven cooked lemon pepper legs and thighs: Just like Mom used to make. This is classic American dish. We prepare our legs and thighs then let them sit over night in our CJ's lemon pepper seasoning. Right before they hit the oven we put just a touch of garlic on them. Everyone appreciates the tender and moist texture of CJ's Lemon Pepper Chicken. Try it today.

Baked Chicken Quarters

BBQ Chicken

Beef Pot Roast
This is a succulent combination of slow cooked ginger pot roast, potatoes and onions. If requested we top it off with CJ's southern style sweet peppercorn gravy.

Old Joe's Smoked Sausage
Smoked sausage in sautéed sliced green peppers and onions.

Burgers
These aren't some garbage soy burgers you'd find at a carnival… they're 100-percent Angus beef that taste and smell as good as they sounds. They can be served on top of either a standard bun or a Kaiser roll. The rest is all up to you.
