CJ's very own BBQ Pork Ribs Stonewall
In addition to being a devoutly religious man and a brilliant leader Stonewall Jackson was also an incredible cook. In war his strategies left no room for retreat and he carried the same dedication into his kitchen. It was said that he made a priority of making sure that his men were fed well and that the food was prepared properly.

The method that we use to make this 150 year old recipe takes a lot longer to do than today's methods but it is well worth every extra minute in order to make the ribs right.

These ribs must be special ordered because they are placed in sweet brine for 3 days. Then they are carefully slow cooked for 4 hours in order to remove the grease without hardening the meat. No other method can do this. Grease and lard only destroys the flavor of the sauce and makes the food hard to digest, so we cook the fabulous sauce that accompanies the meat by itself.
